A data acquisition system is a system used (you guessed it) to acquire data. These are used in test labs, universities, hospitals and more across the globe for various purposes. For example, National Instruments makes a suite used by Boeing to record overfly noise of aircraft. It involves hundreds of microphones taking data simultaneously at very high rates. A Data Acquisition (data aq) system is generally used in combination with a signal conditioning system. The data aq does the actual recording whereas the signal conditioning converts some type of signal into a voltage. If you are using a turbine flow meter for example (measures flow) you will have an input that is a certain number of pulses per liter. These pulses are converted to a DC voltage proportional to the flow through the meter.
