Question: How can you interface the output of a sensor which is resistance to a data acquisition system to be procssed

The output of the sensor is a resistance value. Normally sensors give an output of voltage.And common data acquisition systems process analog voltage. How can interface output of my sensor so that it can be processed

The usual technique would be either to make the output of your sensor part of a potential divider circuit connected to a stable voltage source, or to use a constant current source such as some type of current mirror to provide a voltage across the sensor terminals which you can then measure.
